Ingredients:

For the Chai Spice Blend:

  • 1 cinnamon stick

  • 6-8 cardamom pods, slightly crushed

  • 4-6 whole cloves

  • 2-3 black peppercorns

  • 1 small piece of fresh ginger, sliced

  • 1 star anise (optional)

  • 1 small piece of nutmeg (optional)

For the Tea:

  • 2 cups water

  • 1-2 black tea bags or 1 tablespoon loose black tea

  • 1-2 tablespoons honey or sweetener of choice (adjust to taste)

  • 2 cups milk (dairy or plant-based like almond or coconut milk)

Instructions:

  1. Prepare the Spices: In a mortar and pestle or a spice grinder, lightly crush the cinnamon stick, cardamom pods, cloves, black peppercorns, and nutmeg (if using) to release their flavors. Slice the ginger.

  2. Boil the Spices: In a saucepan, add the water along with the prepared spices and ginger. Bring to a boil.

  3. Simmer: Reduce the heat and let it simmer for 10-15 minutes to allow the spices to infuse their flavors into the water.

  4. Add Tea: Add the black tea to the saucepan and simmer for another 3-5 minutes.

  5. Add Milk: Pour in the milk and bring the mixture back to a near boil. Be careful not to let it boil over.

  6. Sweeten: Turn off the heat and add honey or your sweetener of choice. Stir well.

  7. Strain and Serve: Strain the chai latte into cups, removing the tea and spices.

  8. Garnish (Optional): Garnish with a sprinkle of cinnamon or a cinnamon stick.
