Ingredients:
For the Chai Spice Blend:
1 cinnamon stick
6-8 cardamom pods, slightly crushed
4-6 whole cloves
2-3 black peppercorns
1 small piece of fresh ginger, sliced
1 star anise (optional)
1 small piece of nutmeg (optional)
For the Tea:
2 cups water
1-2 black tea bags or 1 tablespoon loose black tea
1-2 tablespoons honey or sweetener of choice (adjust to taste)
2 cups milk (dairy or plant-based like almond or coconut milk)
Instructions:
Prepare the Spices: In a mortar and pestle or a spice grinder, lightly crush the cinnamon stick, cardamom pods, cloves, black peppercorns, and nutmeg (if using) to release their flavors. Slice the ginger.
Boil the Spices: In a saucepan, add the water along with the prepared spices and ginger. Bring to a boil.
Simmer: Reduce the heat and let it simmer for 10-15 minutes to allow the spices to infuse their flavors into the water.
Add Tea: Add the black tea to the saucepan and simmer for another 3-5 minutes.
Add Milk: Pour in the milk and bring the mixture back to a near boil. Be careful not to let it boil over.
Sweeten: Turn off the heat and add honey or your sweetener of choice. Stir well.
Strain and Serve: Strain the chai latte into cups, removing the tea and spices.
Garnish (Optional): Garnish with a sprinkle of cinnamon or a cinnamon stick.
