Zesty Amchur Brussels Sprouts

Ingredients:
For the Brussels Sprouts:
1 lb Brussels sprouts, trimmed and halved
2 tablespoons olive oil
Salt and freshly ground black pepper, to taste
For the Amchur Seasoning:
2 teaspoons Organic Amchur Powder (dried mango powder)
1/2 teaspoon ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon chili powder (optional for a spicy kick)
Fresh lemon zest (from 1 lemon)
Instructions:
Preheat the Oven: Preheat your oven to 400°F (200°C).
Prepare the Brussels Sprouts: Wash and trim the Brussels sprouts, cutting them in half. Pat them dry with a kitchen towel.
Season the Brussels Sprouts: In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
Prepare the Amchur Seasoning: In a small bowl, combine the amchur powder, ground cumin, garlic powder, and chili powder.
Coat with Seasoning: Sprinkle the amchur seasoning over the Brussels sprouts and toss to ensure they are evenly coated.
Roast: Spread the Brussels sprouts in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until they are caramelized and tender. Stir halfway through for even cooking.
Add Lemon Zest: Once roasted, sprinkle fresh lemon zest over the Brussels sprouts.
