Amchur Maple Glazed Carrots

Ingredients:
For the Carrots:
1 lb (about 450g) baby carrots, cleaned and trimmed
2 tablespoons olive oil
Salt and freshly ground black pepper, to taste
For the Amchur Maple Glaze:
1/4 cup pure maple syrup
1 tablespoon Organic Amchur Powder (dried mango powder)
1 teaspoon ground cumin
1/2 teaspoon garlic powder
A pinch of chili powder (optional for a bit of heat)
Instructions:
Preheat the Oven: Preheat your oven to 400°F (200°C).
Prepare the Carrots: Place the baby carrots on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
Roast the Carrots: Roast the carrots in the preheated oven for about 20 minutes, or until they start to become tender.
Prepare the Amchur Maple Glaze: While the carrots are roasting, mix together the maple syrup, amchur powder, ground cumin, garlic powder, and chili powder in a small bowl.
Glaze the Carrots: After the carrots have roasted for 20 minutes, remove them from the oven. Drizzle the amchur maple glaze over the carrots and toss to coat evenly.
Finish Roasting: Return the carrots to the oven and continue to roast for an additional 10-15 minutes, or until they are fully tender and the glaze has caramelized.
