Saffron Rosemary Focaccia

Ingredients:
For the Focaccia Dough:
2 1/2 cups all-purpose flour
1 packet (7g) active dry yeast
1 cup warm water
2 tablespoons olive oil, plus extra for drizzling
1 teaspoon sugar
1 teaspoon salt
For the Topping:
A pinch of saffron threads, steeped in 2 tablespoons warm water
2 tablespoons fresh rosemary, chopped
Coarse sea salt, for sprinkling
Optional: Garlic cloves, thinly sliced, or cherry tomatoes for added flavor
Instructions:
Prepare the Dough: In a large mixing bowl, combine the flour, yeast, sugar, and salt. Add the warm water and olive oil. Mix until a dough forms.
Knead the Dough: Turn the dough out onto a floured surface and knead for about 5-10 minutes, or until smooth and elastic.
First Rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Prepare Saffron Water: Steep the saffron threads in warm water and set aside.
Shape the Focaccia: Once risen, gently press the dough into a rectangular shape on a baking sheet lined with parchment paper. Use your fingers to create dimples in the dough.
Add Toppings: Drizzle the saffron water over the dough, ensuring it gets into the dimples. Sprinkle the chopped rosemary, coarse sea salt, and additional toppings (if using) over the top.
Second Rise: Let the dough rise again for about 20-30 minutes.
Preheat the Oven: Preheat your oven to 400°F (200°C).
Bake the Focaccia: Bake in the preheated oven for 20-25 minutes, or until golden brown.
Drizzle with Olive Oil: Once out of the oven, drizzle a little more olive oil over the top.
