Ingredients:

For the Focaccia Dough:

  • 2 1/2 cups all-purpose flour

  • 1 packet (7g) active dry yeast

  • 1 cup warm water

  • 2 tablespoons olive oil, plus extra for drizzling

  • 1 teaspoon sugar

  • 1 teaspoon salt

For the Topping:

  • A pinch of saffron threads, steeped in 2 tablespoons warm water

  • 2 tablespoons fresh rosemary, chopped

  • Coarse sea salt, for sprinkling

  • Optional: Garlic cloves, thinly sliced, or cherry tomatoes for added flavor

Instructions:

  1. Prepare the Dough: In a large mixing bowl, combine the flour, yeast, sugar, and salt. Add the warm water and olive oil. Mix until a dough forms.

  2. Knead the Dough: Turn the dough out onto a floured surface and knead for about 5-10 minutes, or until smooth and elastic.

  3. First Rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

  4. Prepare Saffron Water: Steep the saffron threads in warm water and set aside.

  5. Shape the Focaccia: Once risen, gently press the dough into a rectangular shape on a baking sheet lined with parchment paper. Use your fingers to create dimples in the dough.

  6. Add Toppings: Drizzle the saffron water over the dough, ensuring it gets into the dimples. Sprinkle the chopped rosemary, coarse sea salt, and additional toppings (if using) over the top.

  7. Second Rise: Let the dough rise again for about 20-30 minutes.

  8. Preheat the Oven: Preheat your oven to 400°F (200°C).

  9. Bake the Focaccia: Bake in the preheated oven for 20-25 minutes, or until golden brown.

  10. Drizzle with Olive Oil: Once out of the oven, drizzle a little more olive oil over the top.
