Golden Spice Roast Turkey: A Turmeric-Cumin-Coriander Feast

Ingredients:
From the Spice Box
2 tablespoons ground turmeric
2 tablespoons ground cumin
2 tablespoons ground coriander
For the Turkey:
1 whole turkey (about 12-14 pounds), thawed and patted dry
Salt and freshly ground black pepper, to taste
For the Spice Rub:
2 tablespoons ground turmeric
2 tablespoons ground cumin
2 tablespoons ground coriander (dhaniya)
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika (optional for color)
1/2 cup olive oil
For the Aromatics (Optional):
1 onion, quartered
1 lemon, halved
A few sprigs of fresh herbs (like thyme or rosemary)
Instructions:
Prepare the Turkey:
Preheat Oven: Preheat your oven to 325°F (165°C).
Make Spice Rub: In a bowl, combine turmeric, cumin, coriander, garlic powder, onion powder, paprika (if using), and olive oil to form a paste.
Season Turkey: Season the turkey inside and out with salt and pepper.
Apply Spice Rub: Rub the spice mixture all over the turkey, ensuring to coat it evenly.
Add Aromatics: Stuff the cavity of the turkey with onion, lemon, and fresh herbs.
Roast the Turkey:
Tuck Wings: Tuck the wings under the turkey.
Roasting: Place the turkey on a rack in a roasting pan. Roast for about 3 to 4 hours, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
Baste: Baste the turkey occasionally with pan juices.
Rest and Serve:
Rest: Let the turkey rest for about 20-30 minutes before carving.
Carve and Serve: Carve the turkey and serve.
