Coriander Lemon Roasted Duck

Ingredients:
For the Duck:
1 whole duck (about 5-6 pounds)
Salt and freshly ground black pepper, to taste
For the Coriander Lemon Rub:
2 tablespoons olive oil
2 tablespoons Authentic Coriander Powder
Zest of 2 lemons
2 cloves garlic, minced
1 teaspoon ground ginger
1 teaspoon paprika (optional for added color)
For the Aromatics (to stuff inside the duck):
1 lemon, quartered
A few sprigs of fresh herbs (such as thyme or rosemary)
1 onion, quartered
Instructions:
Preheat the Oven: Preheat your oven to 350°F (175°C).
Prepare the Duck: Remove any giblets from the duck, rinse it inside and out, and pat it dry with paper towels. Trim off excess fat.
Prepare the Coriander Lemon Rub: In a small bowl, mix together the olive oil, coriander powder, lemon zest, minced garlic, ginger, and paprika until it forms a paste.
Season the Duck: Season the inside and outside of the duck with salt and pepper. Rub the coriander lemon mixture all over the duck, both inside and out.
Stuff the Duck: Place the lemon quarters, fresh herbs, and onion quarters inside the cavity of the duck.
Roast the Duck: Place the duck on a rack in a roasting pan, breast side up. Roast in the preheated oven for about 1 hour and 30 minutes, or until the skin is crispy and the internal temperature reaches 165°F (74°C) at the thickest part of the thigh.
Rest Before Serving: Remove the duck from the oven and let it rest for 10-15 minutes before carving.
