Cardamom Beef Stroganoff

Ingredients:
For the Beef:
1.5 lbs beef sirloin, thinly sliced into strips
Salt and freshly ground black pepper, to taste
2 tablespoons olive oil
For the Stroganoff Sauce:
1 large onion, finely chopped
2 cloves garlic, minced
8 oz mushrooms, sliced
1 teaspoon ground cardamom
2 tablespoons all-purpose flour
2 cups beef broth
1 tablespoon Worcestershire sauce
1/2 cup sour cream
Fresh parsley, chopped, for garnish
Instructions:
Prepare the Beef: Season the beef strips with salt and pepper.
Brown the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the beef strips and cook until browned. Remove the beef from the skillet and set aside.
Cook the Vegetables: In the same skillet, add another tablespoon of olive oil. Add the onion and garlic, cooking until they are soft and translucent. Add the mushrooms and cook until they are tender.
Make the Sauce: Sprinkle the flour and ground cardamom over the cooked vegetables, stirring to combine. Gradually add the beef broth and Worcestershire sauce, stirring constantly to create a smooth sauce.
Simmer: Return the beef to the skillet. Reduce the heat to low and simmer the mixture for about 10 minutes, or until the sauce has thickened slightly.
Finish with Sour Cream: Remove the skillet from the heat. Stir in the sour cream until well combined.
Garnish and Serve: Garnish with chopped fresh parsley before serving.
