Cardamom Maple Glazed Salmon

Ingredients:

For the Salmon:

  • 4 salmon fillets (about 6 ounces each)

  • Salt and freshly ground black pepper, to taste

  • Olive oil, for cooking

For the Cardamom Maple Glaze:

  • 1/3 cup pure maple syrup

  • 2 tablespoons soy sauce or tamari

  • 1 teaspoon ground cardamom

  • 1 clove garlic, minced

  • 1 tablespoon lemon juice

  • 1/2 teaspoon chili flakes (optional for a spicy kick)

Instructions:

  1. Prepare the Glaze: In a small saucepan, combine the maple syrup, soy sauce, ground cardamom, minced garlic, lemon juice, and chili flakes (if using). Simmer over medium heat for about 5 minutes, or until the mixture is slightly thickened. Set aside to cool.

  2. Season the Salmon: Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

  3. Cook the Salmon: Heat olive oil in a skillet over medium-high heat. Place the salmon fillets skin-side down (if they have skin) in the skillet. Cook for about 4-5 minutes on each side, or until the salmon is cooked to your liking.

  4. Apply the Glaze: In the last few minutes of cooking, brush the cardamom maple glaze over the salmon fillets, allowing it to caramelize slightly.

  5. Final Glaze: Once the salmon is cooked, remove from the heat and brush with additional glaze.
